Long before being introduced to market Fajitas were a staple cuisine of Tejano Vaqueros and ranch laborers all over south texas. As part of their payment, during the butchering process of the steer, Tejano Vaqueros were given the least desirable cuts of meat known by the white ranchers as "throw-away items or trash." This included the head, the skin, the entrails and the diaphragm muscle. The Tejano Vaqueros turned the head into Barbacoa de Cabeza, the entrails into Menudo and the diaphragm muscle into Fajitas. For decades Fajitas were only enjoyed by Tejano Vaqueros and their familes. Fajitas are truly a cuisine that embodies the resilence, innovation and survival of Tejano Vaqueros and their families in the face of abject marginalization and widespread land displacement.
